Props to Prosciutto

When you take up grocery store and market hopping as a hobby, life (as it relates to meal planning) turns into a race against the clock. My small collection of over-sized day bags isn’t helping either… there is just too much space available for transporting random purchases. Gorgeous figs? You are mine. Organic golden beets? I have room! End of the season tomatoes? Don’t mind if I do…

I think you are catching on to the situation here. When am I ever going to eat all of this? This little predicament often leads to my own personal cocktail hour for dinner complete with a few petite bites, such as these two prosciutto wrapped treats. They are light enough to serve prior to (a real) dinner and, bonus, they hardly take any prep work. I can assure you that these hors d’oeuvres will serve your party (even if it is just one!) with great ease and satisfaction.

Figs with Goat Cheese & Prosciutto
Fresh or dried figs
Goat cheese
Prosciutto pieces or strips

Slice figs thickly enough to serve as your cheese vehicle. Thinly slice goat cheese medallions. Stack goat cheese and prosciutto pieces on figs. Alternatively, wrap figs and goat cheese in prosciutto tucking the loose end under itself.

Fresh Melon with Prosciutto
Cantaloupe or honeydew
Prosciutto strips

Cut melon into small, bite-sized pieces. Wrap prosciutto strips around melon pieces, securing with a toothpick.
