Gorgonzola Polenta with Toasted Pine Nuts

Sometimes after an especially fun or busy weekend, I suffer the Sunday Night Blues. Back to work, back to school, back to whatever it is, I sometimes feel like I need that extra day to get a few things done. Usually at home on these nights, I also tend to crave other comforts, like comfort food! Last night, I was anti-grocery store hoopla and instead tried to use the things I had readily available. The result? Some unexpected (and fast!) comfort food! Polenta has recently become a go-to as an alternative to pasta or rice. Although it has a different texture, polenta has that same healthy-ish decadence as a risotto. Try this recipe and then also with your favorite tomato sauce recipe for a lovely introduction to polenta.

Gorgonzola Polenta with Toasted Pine Nuts

3 cups chicken or vegetable stock
1 cup quick polenta
1 tablespoon butter
4-6 ounces gorgonzola
1/4 cup toasted nut of your choice, toasted

Preheat oven to 400 degrees. Place nuts in a single layer on a baking sheet. Toast for approximately 10 minutes, making sure not to burn.

In a small saucepan, bring stock to a boil. Slowly pour in polenta, stirring to combine. Reduce heat to a simmer and stir until polenta is fully combined and nearly solid. Add butter and 1/2 the gorgonzola. Stir until combined. Serve in bowls and add remaining gorgonzola and nuts of your choice as a garnish.

Voila! Quick and delicious comfort food.
