Summer Salad: Melons & Mozzarrella

Have I mentioned just how hot it is in Houston?  I mean, it is unbelievably hot.  As in, they report our temperature in pink on the weather map hot.  They run out of reds and oranges… so they use pink?  The next color up on the weather map food chain is white, so I will be sure to let you know if we reach that level of angelically hot.  Because it might be this afternoon.

Well, don’t worry, this light and refreshing salad will help you forget about your glasses steaming up, your car overheating, and your desire to sit in a beach chair and not a desk chair.  Well, maybe not quite… but some deliciously ripe watermelon and cantaloupe paired with a little mozzarella and honey is just enough to keep this girl happy, revived, and ready for another summer day.

Melon & Mozzarella Salad

3-4 cups sliced (or cubed) cantaloupe
3-4 cups sliced (or cubed) watermelon
2 tablespoons fresh basil, chopped
2 tablespoons honey
8 ounces mozzarella, drained and cut in bite-size portions
2 teaspoons minced jalapeno (optional)
1/2 teaspoon salt

Place the melon pieces in a large bowl. Add basil and combine well.
Drizzle the honey over the melon. Add mozzarella, jalapeno (if using), and salt. Toss and serve.

Note: Real Simple suggests 3 cups of cantaloupe, watermelon, and honeydew.
