Jalapeno Popper Dip

I’ll be honest – this dip made an appearance on the 4th out of sheer laziness. I was really looking forward to just relaxing over the holiday weekend, and the thought of figuring out what to take to our friends’ pool party/BBQ was too much too handle. Normally I love an opportunity to try a new a dish, but for some reason, panzanella, watermelon salad, or even potato salad seemed like too much work this year.

So I made jalapeno popper dip. And it’s a good thing I did because it was a HIT. Everyone loves fried, stuffed jalapenos, but they’re not all that practical for pool side snacking. I mean really, who wants to get out the deep fryer when you could be floating in the sun all afternoon? This dip can be made ahead and just put in the oven when you’re ready for some nourishment. Perfect for when you’re waiting for the smoker to finish doing its magic or for the fireworks to start. Hope you all had a fabulous 4th of July!

Jalapeno Popper Dip

serves 12, but can easily be halved

3 8-ounce packages cream cheese (room temperature)
1 cup mayonnaise
1/2 cup sour cream
1 1/2 cups cheddar cheese (grated)
1 1/2 cups parmesan cheese
3/4 cup canned pickled jalapenos, diced (I used 7 whole jalapenos)
2/3 cup panko bread crumbs
1/3 cup parmesan cheese (this is one of those few instances where I think the pre-grated stuff in the plastic jar works best)

Mix the softened cream cheese with the mayonnaise and sour cream. Stir in the cheddar cheese, 1 1/2 cups of parmesan cheese, and the jalapenos. Pour into a shallow, but rather large, baking dish.

Mix the remaining parmesan cheese with the panko. Spread evenly over the top of the dip. Bake for 30 minutes at 375˙, until warmed through and the topping is golden brown. Serve with tortilla chips and wheat thins.
