Arugula Salad with Lemon Dressing

If you have ever consumed a generous wedge of brie, an entire box of Carr crackers, a 1/2 jar of peanut butter, taken two trips to Chik-Fil-A, polished off the rest of the snickerdoodles, over-indulged in two bottles of wine, and then you realize it is only Wednesday, well, then you’d be me! This type of list often serves as a wake up call to me (plus my extremely good eating habits, clearly) and prompts me to look for a few healthier, more balanced meal options.

My roommate, Katie, and I hosted our book club last night for dinner. We wanted to serve something that would be simple, but delicious and also healthy, but uncompromising on taste. We settled on Italian Herbed Turkey Burgers (to be posted) and, for that balance I was describing, this light, but flavorful salad. It is deceptively simple to prepare, and an excellent compliment to any Italian inspired meal.

Arugula Salad with Lemon Dressing
adapted from Martha Stewart’s recipe

1 pound arugula (or 2-3 bunches)
Zest and juice from 1 lemon
2 tablespoons olive oil
1/2 teaspoon coarse salt (or sea salt)
1/4 teaspoon ground pepper
2 ounces Parmesan cheese, grated or shaved

In a small bowl, combine lemon zest, lemon juice, and olive oil. Add salt, pepper, and whisk together. Set aside.

Wash arugula and remove stems. In a large bowl, combine arugula leaves and Parmesan cheese. Toss in dressing. Garnish with additional zest, if desired.
