Green Chile and White Cheddar Macaroni and Cheese

This recipe was a happy accident. Don’t you just love those…rather than say, a disaster? It started as a “use up everything in the fridge” side dish – no recipe and no real plan – but it stole the show at dinner that night. Of course, that could be because husband is in a “put jalepenos on everything including spaghetti” phase, and this had enough kick to keep him satisfied. And I really liked it too, so I’m going to share this serendipitous new favorite with you silly bons.

Green Chile and White Cheddar Macaroni and Cheese
Serves 2-4 as a side dish, depending on how unimpressive the rest of dinner is

1 cup dried macaroni or other small pasta
4 slices of bacon – diced
1 tbsp butter
1 tbsp flour
1 cup milk (I used skim)
1 1/4 cup grated sharp white cheddar
1-2 tbsp canned chopped green chiles
1 tsp kosher salt
1/4 tsp dry mustard
1/8 tsp cayenne
1/4 cup panko breadcrumbs

Preheat oven to 350. Cook the pasta according to directions so that it is very al dente. Drain and set aside. Meanwhile, cook the bacon in a small skillet and set aside.

In a deep saute pan or saucepan, melt the butter. Add the flour and stir until it is well incorporated, let it cook for a minute or so. Slowly add the milk and whisk it into the roux until you have a smooth sauce. Bring the sauce up to a boil and then back down to a low simmer until it reduces a bit (about 3 minutes). Slowly add the cheese, whisking continuously so that the sauce remains smooth.

Add one tablespoon of green chiles, bacon, dry mustard, cayenne, and salt to taste. If you like things spicier,  add another spoonful of green chiles. Mix the pasta into the sauce, then pour the macaroni and cheese into a small casserole dish. Top with the panko and a sprinkle of paprika or cayenne. Bake for 20 – 30 minutes, until the breadcrumbs are golden brown and the sauce is bubbling.

    That looks and sounds great! My husband is the same way… I mean with the jalapeno’s lately???? In EVERYTHING! Luckily, I like them too. I’ll try your recipe sometime! Thanks for sharing!
